What Are Churros?

Churros are a beloved fried pastry — golden, crispy on the outside and soft on the inside — made from a simple dough of flour, water, butter, and eggs, then piped through a star-shaped nozzle and deep-fried until crisp.

They’re a classic street and café snack across Spain, Portugal, Latin America — and in Brazil, they’ve evolved into something uniquely indulgent.

Origin of Churros

The origin of churros is both fascinating and debated — a story that blends European tradition, traveler adaptation, and Latin creativity.

Most historians agree that churros originated in Spain centuries ago.

  • Spanish shepherds created a simple fried dough snack they could cook easily over open fires in the mountains.
  • The dough was made of flour, water, and salt, shaped using a star-tipped nozzle to make ridges (which helped them cook evenly).
  • They named them after the “Navajo-Churro” sheep breed, whose horns looked like the fried dough’s shape
  • So in Spain, churros were originally a humble shepherd’s food — not a dessert!

Portuguese Influence

Some food historians believe Portuguese sailors brought back a similar fried dough pastry from China (called “youtiao”— a deep-fried dough stick eaten at breakfast).

  • The Portuguese may have modified it into a sweet version, and this idea spread to Spain.
  • That’s why some think churros have Asian roots adapted through European creativity.

Latin American Evolution

When Spanish and Portuguese explorers colonized Latin America in the 1500s, they introduced churros there — but locals made them sweeter and richer.

  • In Mexico, churros were served with cinnamon sugar and thick chocolate dip.
  • In Brazil, they went a step further — stuffing the inside with Doce de Leite (caramelized milk) or chocolate brigadeiro, creating the famous “Churros Recheados.”
  • ISo, the churro evolved from a simple fried dough into a filled dessert — a symbol of joy and indulgence in Brazil.
